Portland is a magnet for talented chefs moving from all parts of the country. The sophisticated food community is one of the best things about living here. Case in point is CIA accredited, Gregory Gourdet, from New York. We are excited and honored to have Gregory in the family and in the kitchen at Saucebox. His experience at Jack's in LaJolla, Mercat in New York, and as chef de Cuisine for Jean-Georges at his Chinese/Modern Asian Restaurant, 66 in New York. In his words: "Food. Cuisine. Keep it simple. Keep it fresh. I like to use ingredients at their prime and keep the flavors clean. Balance is always important. Savory, sweet, acid and heat are the base flavor profiles that I like to work with. It is always fun to borrow ingredients from different cultures too. Like artists with their work, I express myself through food. Being well-rounded allows the creation of multicultural dishes, but I believe in focus, so food can be exciting to the palate but easy to enjoy and understand."
